Hey Nickd,
Sound deadeners can be used on the entire interior--trunk, doors, inner fenders, floors (trunk and passanger compartment), roof, c-pillar, etc. It really depends on how whole-hog you want to go. I'd say (but others, please chime in), in order of importance, a.) immediate area around speakers, b.) floors (pass.compartment, then trunk), c.) underside of trunk, d.) side panels, e.) roof.
I posted this link in the 4.0 section in the thread "DYNAMAT ALTERNATIVE" so you might want to run through that thread--I think they discuss how much they use.
Read up on some research Don Sambrook did with sound deadeners. He has an excellent site that will help put you in a position to make an informed decision. Check out:

I just finished putting 48 sq. ft. of Damplifer Pro into my car. I read the same article listed above. It works great and is less expensive than Dynamat or Dynamat Xtreme.

Check out RAAMaudio Their RAAMmat is supposed to be just as good quality wise as Dynamat xTreme but cheaper.
Rick there posts a bit on a Subaru board that I go on every once in a while. If you shoot him an email letting him know what kind of car you have he will help you out. It seems he has done quite a bit of sound deadening. You really need to use the foam sheeting (Ensolite) along with mat material (Dynamat, RAAMmat, etc) to get good sound deadening. Everyone that has posted about RAAMmat seems pleased with the product and Rick's suggestions.

Probably around 30sqft to finish off the trunk area. 6 to 8 for each door. I would cover the entire trunk area, the rear shelf (I coverd both top and bottom. The doors after pulling the plastic sheeting off as well as the inside of the exterior door panel. Inside fender wells, tranny tunnel and floor if possible. Real hardcore? The the roof liner and whatever plastic panels can be gotten too to keep the rattle down.
