chronism, your Stang looks like a hoss from behind (except for the stock exhaust....get Borla stinger catback)! Looks like 255's may be the perfect size...just wide enough. Looks great! When I get my legend chin spoiler my Stang will look almost identical to yours except mine's black and I have the stinger exhaust and stock tires. I even have the hood scoop and painted mirror covers. Love the subtle style, man!

The gap will be the same, 255/50/17 is the same diameter as the stock diameter, 27".

Does the tire stick out from the fender with that size 255/50/17? Or is it just flush with it ?

The 255 is still tucked in the fender well.

I just put a set of Sumitomo HTR-Z II's, 255/45-18 on a few weeks ago and they made a huge improvement over the stock Pirelli crap that came on the car. The factory 18's should have the same offset as the 17's, so they should be slightly tucked in as well.

I want 255/50/17. Cause I have stock rims. So just changing up tires for now. But I want something flush with the fender cause the stock 235's are pushed in to much

If the 255's aren't flush enough for you, you could use some thin spacers to push them out some. Something like the 1/4" or 1/8" spacers here...

Maximum Motorsports Wheel Spacers

Nice thing about these spacers is that they fit over the lugs and hub to take the guess work out of centering them on the hub. You should have plenty of lug to use these thin spacers, I used some 5 MM spacers on mine with my first set of wheels, no problems whatsoever.
