in my gt i see about 22 city and close to 27 highway, if im not driving like a madman or im not in a hurry.

I see anywhere from 15-19 city, and 25-29 highway. It all depends on speed, driving conditions and my foot.

For example I drove from Lawrence, KS to Champaign, IL this past weekend and it was ~450 miles, I averaged 28.3 for the whole trip at an average speed of 74 MPH. IF I would have driven slower I may have done better, and I don't have any mods btw.

I would find it very hard to achieve 25 MPG in the city, if not impossible, I can get 19-20 trying my hardest to drive slow and avoid stops and quick starts. Your numbers seem normal to me.

Those sound about right for the numbers my V6 gets as well. Average (according to the dash-computer thing) is around 16 to 17 mpg, almost exclusively city driving.

Really though, I try not to think about gas mileage at all. Fact is, unless you buy a hybrid or something like that, you're never going to get super-amazing gas mileage anyway. And if you work out what the difference in mileage would be saving you, unless you're driving extremely long distances on a regular basis, it's probably only $20 or $30 more per month (and that's just a random number I'm guessing at, so it's actually probably less than that) than you'd be paying with a less-exciting car.

When it comes down to it, I'd easily pay $20 more per month, probably even $100 more per month in gas to have a fun-to-drive Mustang than some nasty, ugly, boring little car with no entertainment value. And since you're gonna have to drive and pay for gas anyway, that's really what the bottom line is.

Don't think of your Mustang just as transportation; think of it as an exciting night on the town every time you're behind the wheel. Absolutely worth the extra money spent on gas.
