First off... I would set the tune back to how it was before you started... there is no way in hell your pulling 15% fuel from a tune and still having that kinda AFR's unless the tune was created by a retarded monkey beating on the tuner with a hammer. Chances are the guys wideband is FUBAR and is not reading right. Go to a another shop[ that isn't having issues, or ask the shop that did this if they have fixed their wideband setup and if so, if they will stand behind their work and give you a run just to verify the changes that they made, and if they refuse, demand your money back or stop payment with the CC.
The canned Procharger tunes I have seenshould have you in the low 11:1 Afr range unless you have some serious issues with your fuel system. IMO, he screwed up with the re-wiring and the sensor is inputting into another feed on the dyno, and the red line is infact your AFR, and the break in it, is from the hack job wiring it poorly and it loosing a ground. And if that red line IS the AFR.. your well on your way to a popped motor with AFR's in the 15 or 16+ range at WOT under boost on low RPM's
I just noticed also, that the earlier reading also co-incides with the part of the run thats not measured on the dyno, presumably where your at part throttle rowing thru gears... either way.. I would really recommend resetting the tune, and seeing a more compentent tuner.

RE: Got my car Dynoed!!
The more I look at it, I think that they are two diffrent lines for the two diffrent runs. Red for one run, and green for the other run. The green run is with the tune 100% Stock and it was really rich. Then we removed some fuel and the air fuel started to get lean for the red run. Does that sound right?
