Don't worry about the sound IMO it won't be much different between the two and will burn off the smell sooooo much better. It will probably sound a bit deeper with the cats.. mine does.

Had a O/R X pipe on for only a week! couldnt stand the smell or the trumpeting. if i let it warm up in the driveway for 5 or 10 mins...you could smell it all through the house...nasty! hi-flows are much better , not as loud... but still double the factory cats...and no smell !!!

I would do high flow cats. Probably just as loud as no cats. You would need a Db to check the difference but as smokestang said the smell is gone and as the trumpeting. I still have a little trumpeting, but not as bad. Don't get me wrong, my set-up sounded awesome w/o cats, but the refinement and lack of smell made it worth it to go with high flow cats.
