It seems that your vendor has all the info and therefore has
all the answers to your questions.
Without the offset info, one can only guess.
Brand or link to these 18x9" and 18x10" rims?
Just not enough info for an educated answer.
I am also not sure....

I would be looking into the required steering stops as well....
For vehicles with 17" wheels from the factory:
-installing 18" x 8.5" or 18" x 9.5" wheels, use steering stop 6R3Z-3932-CA

OEM 18x8.5s have a 50mm offset.
So the 05+ rims with the 36mm offset
will also stick out.

Width effects offset unlike backspacing.
They will not stick out. I've run 18x9's rims with that same offset and 255/45's tires. The OEM 18x8.5's stick in so far, you could as I have install a 12 mm spacer and still have a wheel and tire that stays tuck in under the front and rear fender wells.
Here is a prime example of a 18x9 with a 40 MM offset plus a 5 mm spacer(35MM offset)and they do not stick out,not even a little.Second pic are 18x8.5's with a 36 mm offset and they fit really good.
This last set was pretty outrageous and I had 295/55/18's on 18x10 with 40mm offset set and they didn't rub or stick out past the fender wells either.Front's are 18x9's with 38 mm offset and 255/45's.No problems there either.
