My GT is supposedly a 2008, however, the sticker on the driver's side door jam says 06/07 on the top left. So the car was built in 2007 but sold as an 08?

Nothing new there. The "New" camaro's are all considered "2010" model year but some were built as early as 12-07...

My S197GT was built in 10-07 but is an 08.

Typically in June of a given year, OEM's start making the next year's model so for the most part, any car built after in or after June of a given year is actually the following year model..confusing I know. This is pretty standard for imports and domestics.
