exhaust question

i was wondering if the cats would be removed if i was to put the borla s-type system on my 2011 5.0 with the x pipe mid and mufflers.

No the S type "system" is not catless. What your looking at in the catalog pics is a cat back "X" midpipe, to install that you would cut your "H" pipe just after the cats and clamp that X on there.
