I ran Nitto 555 on my 99 gt and loved the ride and traction.

I not sure if the Nittos come in the size your looking for, but I got the 555s and they are great. They ride good, wear good, and have much better grip than some others i have tried and friends have.

I drive my car nearly everyday in the summer as well, and I am on the second summer now and you cant hardly tell I have used them.

I have 305/35/18 MT street radials they give great handling and traction. The bad? They suck in the rain, so don't expect to drive anywhere in the rain, unless you're careful. I however do not have 500HP, for future reference.

could try toyo proxes r888 around that size. i had nitto 555 and i was not that impressed with their straight line traction, even on my 220 rwhp 2003 mustang gt. The nittos do last a really long time though, i had a decent amount of tread left even after having them for 3 years and 25k miles
