I wonder if someone might point me toward a tutorial on removing the steering wheel in my 2005. I'd love to replace it with a new one but I don't want to screw around with the airbag until I really know what I am doing.

I went with the 2012 GT500 steering wheel. Fits perfect and wired up the some of the buttons. Cruise works but I didnt bother with the stereo buttons as I have an after market unit. Its not a difficult install at all. Just unhook the battery, makes working there much less stressful. LOL Tasca ford has them for a great price too.
