Performance Suggestions
Drive Train Specialists have a wide variety of gears and brands. The first 3.73 they list looks to be a Ford brand gear. Based on the part # I assume it is new old stock and predates the creation of FRPP brand. Not all the listings indicate the manufacturer, MG in the part # must be for Motive gear. I'msure they can tell you if you ask. FYI: I see a set of used 4.10's for $100 in the Used Parts section.
FRPPs are not available in 373's anymore for 7.5"? Wow.
Only thing I'd STRONGLY RECOMMEND is to really think through with what your plans are for the far in the future. If you plan to put a turbo or supercharger on some day, take the time and do the rear end right the first time. If you put a trac-loc in and gears and later put in a turbo or supercharger, you may be changing the rear end components again. The trac-loc on the 7.5" (v6s) is not very strong. But if you go with an eaton true-trac instead of a Ford trac-loc, you'll be good to go, regardless of what you do!
So if you can swing the extra 200-250 for the Eaton, do it!
Also, relating to the gear choice, if you ever plan to go turbo or supercharger, just do 3.73s now and not 4.10s. You'll go through 1st gear too quick with 4.10s with turbo or supercharger!

That's good advice. I will again add that my Natureally Aspirated 4.0L blew out the 7.5" 4.10's/t-lok from racing at the track. If you plan to race your car, then do the rear right the first time - either install the Eaton or go with the 8.8" GT take-off.

The gears always come as a ring and pinion set.
7.5 is plenty strong for your needs. Its just that they aren't up to the task if you will be beating on them regularly, or will be significantly boosting the power in the future with a power adder.

Well the motives dont whine if installed right I can tell you that from experience now. The 3.73 dont atleeast. Plus they will give you plenty of kick in the rear. As for your purposes I would say your fine. I have the tlock and it is holding fine
The Xcal will allow you to set your speedo for the new rear gear ratio. That's one of the parameters you can adjust with the tuner. When you first plug in it will ask you if you want to change any parameters, push yes and scroll down to rear gear ratio. What ratio are you finally getting? You will really love what gears & T-lok will do for your V6 Mustang.
