increasing that is gonna give you a big jump in torque as opposed to horsepower. not worth it IMO for all the trouble

It is if you need a new short block anyways. Displacement = horsepower. You may not use the full potention with other parts limiting you, but if you need a new short block anyways it's a cool idea. Plus you can't just "bore" your 281 out to a 302, it would be a stroker.
