Default "Cold" starting

After my car sits over night, and after sitting outside at work during the day (Imagine Florida Heat), I have begun to notice that there is some either bearing noise or valve train noise. Not sure what it is. It goes away after the oil pressure builds immediately. Would it be wise to change to a 10w-30 oil other than 5w-30? Wondering if this would help out with getting rid of the starting noise?

Yes in the summer you want a thicker oil.

I had that sound once on startup... it was only for less than a second but it was pretty sickening. It was a few days after I put the latest change of Mobil 1 5w20 in. It was also while it was much colder outside (~40 degrees). Since then though, regardless of the temperature it doesn't happen to me. I don't know what I can suggest, you can try a 10w30 weight oil on your next change but I'm not sure if it will help.
