Default help with bolt ons!

Ok guys, so I am a new Mustang owner who is in the starting stages of building.. I have a 2000 GT bone stock. Im not a noob by any means, and i can do my own work. I have an X pipe, new intake with K&N filter, throttle body and plennum all planned for the near future. My question is if 75 mm is a better idea than 70, does name brand matter, and how will this effect my gas mileage. If you could help it would be great. Thanks....
