Do I need wheel spacers?
I just got bullits for my 2000 GT. They look fine to me but I was thinking about getting 1 inch spacers to widen the stance a little. Here is a picture of my car with the bullits on now.

Would 1 inch be too big?
Could I install the spacers myself?
Would that 1 inch of space improve handling at all?

i'd go 1 inch in rear and .5 in front...you will probably have to take the retaining clips off one of the studs on each side of the rear to get the spacer to sit flush...definitely get hub-centric spacers...you won't really notice a difference in handling
I would lower that thing first but thats just me. I'm pretty sure the Hub Centric spacers are the ones that have the wheel studs build in with them, because if you were to use a regular 1 inch spacer that would leave about 1/2 inch grip with yor stock wheel stud hard for me to explain but im sure somone that has them can.
should I use spacers on all my wheels or only my rear? I don't think my tires rub in the front when stopped and turning because I haven't tried it yet, but would spacers eliminate this?
