Never done it at the track, but in my old cobra with 4.10's I did once or twice.. Tried to see if I could roast my tires taking off in third as well, which I could indeed do with a 5000rpm launch [8D]
I do not think launching in second is too good for your clutch. I can do it in my car now with my motor work, gears and centerforce clutch. I did it once just to try it and it worked but before when I was NPI and had a stock clutch man could you smell a burnt clutch. So I would say yes you can do it but not without a certain level of power and gears.
People start out in 2nd in snow for a reason, it puts down less hp/trq to the wheels. Unless you have a 1000 hp and want to avoid burning out on the launch starting in 2nd is pointless, and hell on the clutch. just put it in 1st.
