New engine! Rides PERFECT!

New engine! Rides PERFECT!
Well, not exactly a new engine, but got it rebuilt.
Had a plethora of issues with how long it took. Was told it could take up to 3 weeks and I ended up being without my Mustang for 4 1/2 weeks.
Oh-well, would rather them take their time than rush the job.
Here's a question to anyone that has had their engine rebuilt...
The "break-in" oil! What is it and do I need to wait for 500 miles before changing it?
Also, The guy told me to be VERY careful for the first 500 miles and then after that, drive it like I want to.
** I'm thinking that since it's got a 3 year warranty on parts and only a 90 warranty on labor they don't want to eat the labor cost so that's why they told me to baby it to get me past the 90 days.
And lastly, I asked the guy what oil I should use. I told him that I thought the manual stated to use 5w-30 and he about freaked out and told me that I should be using 20w-40 or 20w-50. I'm personallythinking that's a littlethick for a newer car like this. It's not a 79 Bronco. I was using 5/30 MotorCraft Synthetic Blend and had no problems with it.
Any recommendations?
P.S. I've already given the car a little gas, just because I missed it, but nothing very hard and MAN OH MAN what a difference. It feels like a new car, then again I had been driving my wife's Kia Optima (4 cyl) for the past month.

RE: New engine! Rides PERFECT!
I agree about the WOW &HA HA part!! I tried my hardest to keep from just bustingup laughing right in this guys face. I'm glad he wasn't the mechanic just the guy that took my money and handed me my receipt.
I'm going to start using Mobil 1 Synthetic as well. I've read nothing but praise for it in many different forums.
Any suggestions about Filters? I've always used Fram and didn't see to have any issues with it but am up for any ideas about a better filtering product.
