There are no plug wires on an '01 GT...As for the poor fuel economy, how many miles does the car have on it? If 65k+ and it has been mostly friven around town the O2 sensors may be slowing down (they switch slower and the output drops)--this isinterpreted by the PCM as a lean mixture and it compensates by adding fuel=poor mileage but an acceptably running engine...

OK well ill change the fuel filter and ill check out prices on O2 sensors

This might be a dumb question but will UDP help me gain ANY mpg? even if its .5mpg

Or what about mufflers?

Maybe cleaning my k&n air filter?

Hit up the obvious tune-up, upper intake douche, fuel filter and all that, but really 17MPG average isnt that bad (but not that good either) on a GT. Its an 01 so Im assuming its got some miles on it too. My 98 gets 18mpg avg @ 125k mi.

Also, Dont use cruise control... You use a lot more gas when you do.

You always get better gas mileage with cruise control.

And I'm with the others, change out your fuel filter. How does your air filter look?

By upper intake I mean that alot of garages offer "fuel induction" services which basically pour a typical additive into the tank to get moisture out of the fuel rail, clean it up as well as your injectors. They also run additives via a pressurized mister prior to the throttle body thatll clean the throttle body, plenum, intake runners on down into the intake valves. Some work better than others. I work at a shop that uses the BG products, and its actually the best one ive used yet.

But yeh, gotta agree, hopefully you didnt buy the car for gas mileage :P
