will a bad IAC cause some spudering at low rpm's in each gear as well along with the motor dying after I pull it out of 5th gear on the iState?

Yes. But it could be a few other things too, like a vacuum leak or egr related. How does the car idle, just sitting?

Rough. It'll drop to like 500 or a hair below then jump back up to between 750-1000rpm depeding if the a/c is on or not.

iac and fuel filter perhaps... change the fuel filter if you havent and take the iac out and spray some carb cleaner in it and you should be good to go.
