I release the gas, press the clutch pedal, select a gear, release the clutch and press the gas.
I used to ride the short bus to school, so I try to keep it simple....

I enjoy my transmission being in my car and not scattered across the highway too much to powershift on the reg.
The only time I've heard of "double clutching" actually used is for downshifting on road courses. And of course Fast and Furious now available on blue ray and hd dvd.
I actually hated that movie but ive heard of people dragging with it soi wanted to try it. Something about keeping your rpms up i dunno i thought it was crap though. Poisnd U thats how i think most people shift haha. Just heard people say power shifting is bad blah blah, was just curious and bored.
Double clutching is used for matching the engine rpm with that of the desired gear in the transmission (or rev matching), making it a smoother transition between downshifting gears and maintaining a better control of the car especially in turns. However our cars have syncros which all but eliminate the need for it.

Just for ****s and giggles i've been heel-toe shifting around corners lately. The gas is too low in respect to the brake pedal so I find myself doing it inverted from the traditional way.
PS - I'm really glad I got in the habit of rev matching my gears. I had an emergency situation when I blew out 3rd gear 50 miles from my mechanics and it really came in handy.

I've always thought double clutching was when you press the clutch in to pull the shifter out of gear, release the clutch, and press the clutch back in to select the next gear that you want. Thats how alot of truckers have to drive but its because of how their transmission was set up.
I didnt know everyone referred to 'rev matching' as double clutching these days. I always took them to be completely different.
