Throwing no codes new plugs new egr and Three new motor craft coils Runs perfect before it gets to operating temperature. O2 sensors reading up to 800 something clueless

I kinda had the same issue on my 02 GT. I replaced the engine temperature sensor and that helped a little. I then checked for misfires and replaced 4 spark plugs and coils and so far that has helped. I'm going to replace the other 4 this weekend.

check fuel pressure?

Your data looks pretty normal. Looks like you have bad cats though. As said above, check fuel pressure while running. You don't think it might be a misfire?
