How exactly does a lower temp thermostat make a engine run hotter?

i don't think it makes it run hotter. in my 347 it used to run about 200 or so degrees which is a little above the tstat rating so i dropped in a 180 and it ran in the low 190's high 180's which made me feel a little better. i'm not sure what the s197's come with but hell, its only 10 bucks throw one in, if it helps keep it if not put the stock back in, no big deal.

I even thought about getting a 160 degree, but I have heard that might be TO low. Also, when I had my car dynoed it looked like the knock sensor kept kicking in, would the thermostat help with that? Or maybe colder plugs? Or is it a tune issue only? Thanks for the inputs.
If you had it dynotuned and the knock sensor kept kicking in I'd think about getting someone else to tune your car. That is an issue that a KNOWLEDGEABLE tuner should have worked out. I did get a false knock once or twice on a dyno session because of my LT's, but i see that you don't have headers so that's not the case with your car. We were able to adjust the sensor to smooth out the flat spot in the curve.

BTW what part of LA are you from. I am from B.R. originally. If i lived there i would STILL take a road trip on a long weekend and head up to ProDyno in FT. Mills, SC. It is worth the drive to me. I drove 3 1/2 hours there myself to have my 06 GT tuned by Dan. One of the very few level 4 SCT tuners in the country. I am going back to have Dan tune my 5.0 once the build is finished. He tuned my Uncles 06 as well. I have a feeling that my other uncles 07 GT/CS will get tuned by ProDyno also. Phenominal job those guys do!
