Question about how dyno pulls are done.

Question about how dyno pulls are done.
I have a 5speed and had some major tranny issues a while back.
I got to thinking about my trip to the dyno and I remember that I did not hear them shifting gears when they ran my car on the dyno.
Is there supposed to be someone in there switching your gears or do they set it at a certain gear and go?
Reason I am asking is that all the tranny issues came AFTER they installed everything and did the dyno pulls.
Also take a look at this video it shows the comp screen on one of the runs.
Is that even measuring my Air/Fuel ratio? I don't see it moving at all
(dunno if it varies during the run.)
Also if it IS measuring it is 10 a good ratio?

No the tranny issue happened right after the installs
I had a knocking noise and took it to the dealer.
Tranny had to be replaced so I replaced the clutch and flywheel as well.
Had missing tooth from a stop bearing or something like that (not sure of the name)
Then some other things were messed up as well (some bearings).
Ford sells their parts in kits so the difference from a new tranny and the kits for the messed up parts was
like 800 bucks more. I opted for the new tranny because of more warranty and warranty on ALL of the tranny.
The knocking noise is the only thing I noticed.
I had no idea anything was wrong with the tranny.
I thought the noise was normal and was from the cams and went in for a vibration in my dash.
Car actually drove fine.
I had cams installed at the same time the other mods were put in so like I said I thought the knocking was
just a normal sound from the cams.
Someone at the dealership pointed out to me it was not normal and used a tool like a stethescope and stuck it in a hole in the tranny to find the noise.
I was there when the dealership took the tranny apart though and I SAW the missing tooth and the other parts so
I know the dealership was not lying about the parts being messed up.
I am not sure if these dyno runs were done after the tune or not.
They had already done some pulls they said and they did these for me to have mainly.
In the video... you notice the A/F ratio does not EVER move.
Is it supposed to move on a pull or is it not moving because it actually not being measured and they measured it
when they actually tuned the car and this run was not being measured just because the run was for me showing hp and trq?
It shows a ratio of 10.0
Is that good?
