What temp t-stat with FI?

At 160 are there problems with oil sludge? Seems like there would be as the engine never warms enough to burn off moisture.
What about the cats? Seems like 160 would cause a rich condition.

Cruising at 80 on the freeway my temp is mid 180's, spirited driving in the twisties it's high 190's to low 200's. Putzing around town, 168.

Rating of the T-stat may vary from car to car, depending on combination of compaonents, boost levels, intercooling efficiency, actual fuel mixtures, etc.
Some things to note"
O.E. engine management startegies usually look for water temps of about 200 degrees for EFI. This is where the best efficiency of fuel burn is found at the A/F ratios they work around. Change any of these parameters and you will have to consider changes.
Big time race engine buillders discovered many years ago that oil temps must generally exceed 185 degrees to achieve an efficient burn in the combustion chamber, again, depending on fuel type, etc.
The best person to discuss water temps with is your tuner and engine builder. Hopefully, they are working on the same sheet of music. If not, it's time for you to buy lunch and get them together.
Don't sweat your T-stat so much. Check your water, oil and air temps, Then decide what you need to influence before deciding how to go about it.

I don't mean to thread jack...well, maybe a little but I went in to our local auto parts store and told them that I needed a T-stat a while ago and they gave me one. I never looked to see which or what it was, I was only concerned that it would fit. How would I know which I have? I am wondering if it is a 160 cause I can't get the car to heat up in the mornings. It does get hot sitting at a light with the A/C on though so I wonder if I have a 180. Any ideas on checking that out?
