Default 1.7 rollers or B303 with gt40P's ?

I's still debating the two, here's the set up stock 5.0 block, Stealth intake, Holley 600, BBK equals, 3.73's. They are getting shaved about .010", the previous owner did a hack job with a wheel, so I had to get them cleaned up and straight. No2 is in the near future. Or is there a better cam to work with the carb setup? Don't know how the FI roller cams work with the carb. Will advancing or retarding the cam yield any advantage? Also, I want to keep my stock valve covers.
