I would definetly keep the Vette how it is... its already a mid 12 second car!
For the stang, I disagree about $6500 not being able to get you anywhere. What are your goals with the car? Are you looking to build a stroker? A 302 with a nice h/c/i package, etc.? We would need to know that before we recommend anything.
As far as the interior goes, search junkyards or the forums for people parting out thier cars. You can get a full interior for cheap! I got all of this in MINT condition for $140 I think from a junkyard... Dash, Center Console, Quarter Panels, Seatbelts, RearSeats, All pillars, all Interior Trim, Rear Bumper, and all the other misc. interior pieces. All you have to do is be a little patient... there are ALWAYS people parting out their cars and if you have the regular grey/black interior it shouldnt be hard to get something together. Carpet will run you like 100 bucks. Than your done. I would say you can finish a whole interior for under $300 in great condition w/ new carpet!

I would DEFINETLY drop the sc on the vette. If you decide to spend it on the stang though, 6500 will get you pretty far in restoring it. You can do the engine and probly the interior for that. I doubt it would cover the exterior too, just becasue paint is expensive. Good Luckon whatever you decide.
