180 should be more than enough. If it's not then you probabyl have some other major underlying issue. I'm running the stock theermostat, stock radiator, stock fan, etc and in the summer my ECT is usually 216 - 218 degrees. And that's on a hot day with me getting on it every now and then. If I drive normally then I often see 206 - 210.
BTW-
My opinion is that those numbers are just about perfect for coolant temps.

That is where I try to keep my temps as well.

aluminum heads will start to warp at around 210, I have a 160 in mine, cause when I beat on mine, with the 180 stat the temps got to 195-200 on a hot day.
with the 160 in there it goes to 170-175 when beating on it, and driving it nice stays at 160



oh, ya I do have a pms though, so I can change my temp settings
