Default Low Coolant Sensor

Just a quick question. I am installing a Fluidyne rad with a CSR catch can. I was just wondering, the catch can is obviously not compatible with the stock sensor so I was just wondering if I cut the sensor (the sensor is in the stock overflow cap) will it throw a code or will nothing happen because there is no sensor for a code to throw. OOORRRRR can I just cut the cap and sensor off and just connect the two wires together so its just a full circuit and the light wont come on? Any help would be great. Experience only, no guessing I really dont want to look at a low coolant light after this is done. Thanks guys.
