Default What to set timing at, and octane

Given my mods, what should I aim for with my timing, and what octane would you recommend? I've never done timing before and am nervous about doing it incorrectly and I'm not sure what "pinging" sounds like yet. Should I bump timing until I hear pinging then raise my octane?
