So when I get these heads done, they will clean up the bottom of the valves and the combustion chambers and the heads will look brand new out of the box?

I don't think they'll look brand new, but you'll be able to tell they had work done. I was expecting my block to come back from the hot tank looking brand new, but it still had the brownish rust all over it.
As far as having the work done in the first place, it probably would be a good idea if you're rebuilding the engine. My thoughts would be the added comfort of having everything seal up right and having good compression. As far as having them ported (ie performance work) and all that good stuff done, I wouldn't bother it with stock heads.
