A good dyno shop should be able to sell you a reprogrammable chip (around $400) and tune it in to where it makes "your" car runs it's best. If it's a really good speed shop, he might even throw in a switch so that you can select which tune you want to run.
For example, when I had mine done, the tuner set up 2 tunes for performance, and both meant I had to run super gas. I then had him set a tune so that if I knew I wasn't racing for a while, I can switch to that setting and run regular gas (cheaper $)
And while he's tuning it, he should keep his eye on the air/fuel mixture. I now get over 20 mpg, even with racing.

my car is half tuned. fuel system couldnt handle going up to 4500rpm so all he could do was tune the bottom end. got me about 30hp at 4200rpm. he said once i get my 42#ers in hell put me up to a min of 425rwhp so id say dyno tuning is worth it.
