Default Overheating issue

Hey all - I need help. Car has progressively gotten worse, after aluminum heads install, it ran a tad warmer than it did with factory heads, nothing major. I checked thermostat and it was fine. It sat all last year but before running it this year I replaced the factory radiator with a 3 core SVE unit and all the hoses with SVE silicon.

When I took it for inspection the mechanic gave it a once over and got some air out of the system. After I picked it up it shot up to just below red in about a mile. I immediately turned on the heat but the heat was not hot. It would cycle blowing hot for about 1 minute than blow cold for about 3 minutes. It continued this cycle until I parked it in the garage. While driving it never went into red but was right below it, the lowest it would drop would be about 1 notch and then shoot back up.

I took it to a car wash on the way home and popped the hood and it was gurgling and making a bubbling noise in the motor so I don't think it was the gauge, it seems very hot to me.

I am lost as to what it may be, please any suggestions?

How did you check the thermostat? Have you tried it without it? If coolant is going through the heater core intermittently, you may still have air in the system, a clogged or collapsing hose, or a bad heater core.

Thanks for replying. The more I think about it, I think I just checked the thermo was in correctly, I did not run it without it in. I will try that and removing air first and then check hoses.

If that doesn't help, do you think the heater core is shot or a flush would help?
Do you think the mechanic(awful) who did my heads could have not put the gaskets on right? Would that cause something similar and is there a way to test that?

Your car should not overheat even is the heater core is taken out.

I guess it is possible to use the wrong head gaskets and cover one or more cooling passages,
I've never heard of it happening. If you had cooling issues before-I would focus more on the typical issues.
