Default biggest offset rear tire

i have a 1987 foxbody. i am getting ready to buy new rims. i am going with 15". i have a stock rear end and i am removing quad shocks. what offset can i run? what size tire should i run it with? going street/strip setup. i am willing to roll fenders.

i was beeing told i can run 6.5 backspace on 15x10
