The lowest and most "boom" I have ever heard a bass stack was an 8-10" cab. My 8-10" is far more capable of playing lower and louder than a 2-15" or 2-18" cab.
It all comes down to box design and speaker cone surface. With 8-10" speakers their is much more cone surface area than with 2 15" or 18" drivers. And theres quit a difference between a bass guitar setup and a car audio one. Aside from they both use speakers and amplifiers.

I have no experience with car subs, but I play bass and here is what I know about the speaker size: The smaller they are the higher pitched sound you are going to get, the most common size used is 10" speakers with a 4 string bass (most common). When going with 10" speakers they usually come in pairs. But another size speaker that is popular is the 15", which comes by itself and is used for a lower tone, which is combined with a five string bass.
So, to summarize what I am saying: Smaller speakers are for faster play and more versatile use. Larger speakers, in your case 12", is used more for rap which has low bass and usually hits for a longer time. If you are going to play rock, but still some rap, go with 10" subs. But if you play more rap than rock go with the larger size subs.

I'm not an expert, but I am pretty sure what I said is correct. But if you want to be more specific go what PReal and seight311 said.
