I wouldn't hold out a lot of hope hearing from anybody who bothered to stroke a 289, either. IIRC, the 289 was phased out in favor of the 302 around 1969, and stroker cranks for the small W motors are much more recent developments. Anybody who wanted more displacement "back in the day" just bolted in a 351W or an FE and called it done. Anything recent started with a 302/5.0L.
Why not just look for as much 302 data as you can find and apply about a 96% correction factor to account for the 289's smaller displacement? Gotta be a ton of this sort of info over in the Fox and drag race sections, assuming that you can coax the folks to tell the truth about it.

289-302 pretty much the same block. Stuff a 331-347 stroker kit in it and be done. Run some AFR heads on it with your choice of cam, paint the heads and block the same color so they dont look aluminum, and you have a sleeper. Sleepers rock. Sleepers are like the Spanish Inquisition, nobody expects a sleeper.
Kali might get that last one... maybe a couple older guys too.
