It depends on a couple of things. What capacity is your engine puller? Will it safely withstand the weight of the engine and all the accessories? With a 351 I would at least unhook the tranny, and take off the air con accessories such as the compressor. Secondly, do you have another set of strong arms to help guide and balance it? If not, then you may consider taking off the alternator, carb, intake, headers and fan.

I usually pull everything off so I know nothing is still attached. Having a ground strap or fuel line still connected is a pain. Also if you are gonna rebuild it, you will have to pull it off sometime. Might as well do it first instead of after, makes getting it out much easier.

I leave the trans in the car too, Im not fond of ATF all over my shop floor. That stuff is the slickest stuff imagineable on a smooth concrete floor.

Pulling the tranny is an option, depending on the capacity of the engine puller. That's why I asked the question about the capacity of the engine puller. Now, replacing the engine with the tranny attached poses another problem. If the engine bay has been totally refurbished, and you don't want to get any scratches, the re-installing the engine without the tranny is a good idea.
