Why am I stalling out?

No, the only thing was the choke was adjusted as it was idling kind of high. They sent out the engine, carb, tranny and rear end to be rebuilt -- they reassembled all of it only.
Everyone I've talked to locally with Mustangs says what I'm going through is normal, that things need to be adjusted once everything begins to get broken in, and some tell me it will never end. Those are the ones who I kick in the shins.

and to make it worse, i strongly dislike people with imports who claim their cars don't ever have problems like american cars. i always tell them, your car will need to have something fixed too. your car starts to fall apart the day it rolls off the assembly line and the more you beat on it "killing" stangs, the faster it'll break.
i made my friend eat his words the other day. he has an 02 jetta and tried to argue with me that his car would last longer than any mustang. he was just whining about how he can't wait to get rid of it cause it has so many problems and he can't afford to fix it! i cited, first, my 86 which turned out 202,5xx and had a trans leak for at least 50K miles and the leak was the only problem with the car other than needing filters when i got it. and my 89 which i beat on every day for around 2 years, had a BAD valve tap and ran with no oil twice (totalling about 5 1/2 weeks) and the only reason i got rid of it was cause i had the 66 in the driveway and my parents gave me the lesabre which had a 30K mile rebuilt motor and freshly rebuilt trans, or i would have made it a race car. he was like, "i know. ]" LOL!!!!
I've read several, so it's difficult to say just one.
I have a Holley book printed by HP Books that is good at explaining the theories behind how a carb works and the functions of the idle circuits, power circuits, etc, but falls short in the nitty technical of what to modify on a carb (it's older, so that may be some of the problem). Edelbrock's user's manuals also do a very good job of explaining carburetion (they may have a download available on their site).
