Default Overheating in a modified big block 67

I have a 67 S code coupe with a 390 in it. The block is overbored .060. It has a Sig-Erson Hydraulic Cam (.551Lift/.296 Ex./228 In.) The car was made to be a drag car, however it is still street legal. While taking it to the track is all fine and dandy, I would like to be able to cruise around in it as well without it running to hot. Right now I am running around 210 to 220 and the temp goes even higher when the car is stopped (much too hot for my liking).

It has an Edlebrock Aluminum water pump, a GDI 3 core (copper) radiator, an 11 inch Hayden electric fan that kicks on around 180 - 200 in the front of the radiator, a shrouded 17 inch Flex-a-lite fan driven by the engine, and a radiator cap rated for 22-24 psi. I am not quite sure what the t-stat is, however I suspect it is a 180 degree module (I have yet to look). As far as I can tell, I do not have a blown head gasket.

I could go out and completely get everything top of the line, etc. However I would like to start off with the least inexpensive things first and work my way up. Why spend the money if there is no need to!?! I would like to get it to run around 190 all the time stopped or moving. Right now I cannot let the car sit and idle because the temp creeps to high.

The question is, where do I start? I have read confilcting reports regarding radiators, t-stats, and everyone I talk to gives me different advice. I thought maybe going with a 160 degree t-stat would work, however was told that it would stay open all the time not allowing the water/coolant to stay in the radiator and cool it down. Also, what type of radiator is better, aluminum or copper? I have read conflicting reports on that as well. Is a 2 row aluminum better than a 3 row copper? Is there such thing as a 4 row aluminum radiator? How do I know how many rows in a radiator I need? Are all aluminum radiators the same or do certain brands stand out and/or stay away from? The shroud and fan are not that deep. Should I go with something deeper to get more air flow? Also, the electric fan seems kind of small, is a dual or beefier one the answer?

Any help, suggestions would be much appreciated! It is the nicest time of the year hear in MI and I cannot even take my car out.
