A mech. pump is fine and with that build, you would be fine with a flow of around 110gph (thats usually good to about 500hp). There are tons of aftermarket pumps with this rating: Holley, Edelbrock....Just do a search through summit.
And +1 rethinking the carb cfm size. I think you'll be overcarbed with a 750....go for the 650 double pumper or anything below 700cfm.
Yeah, for your setup, the 650 will be just about right. After you get her on the road and drive it for several hundred miles, you will be able tol tell if it is perfect or not. Good luck with it.
