bigger gears are good for city driving but you will rev up more on the highway, and smaller gears are vice versa, i believe thats how it is, someone correct me if i am wrong

if i had a t-56 id probably run some 4.30's.....if youve got the money for a 351 stroker and a 6 speed, you should have the money for a 9", and id recomend getting one and selling your 8" just for protection if your going to beat on your car.
I'll start this reply by saying that I am not disagreeing with or trying to contradict any of the other replys regarding 8" rears. That said, I'll just give you the opinoin of someone who has blown a few of the venerable 8 inchers with far less HP than most folks on this site sayan 8" will support. Yes, I drove the car hard on the street and I raced it with slicks. I broke two of them (with 4.62 gears) with a warmed over 302. The weak spot is not the gears, it's the housing itself. If it were mine, I'd go with a 9" with 3:50 or so gears with that tranny. Yes, the 8" will work but if you plan to use that 430 HP on a regular basis, I'd recommend a 9". Just an old hotrodder'sopinion.
