Default Disassembly question

I'm getting ready to begin my winter project on my 68 coupe. I'm going to take apart the front end body panels, etc. and inspect/replace/repair anything needing bodywork. Is there an order to which things come off? Is there a book that describes this? Everything from the doors forward is coming off if possible. The fenders need repaired/replaced. The doors need reskinned or repaired. The hood needs resanded but looks to be in good shape. The bumper and pan under the bumper are in great shape. The infamous cowl is in bad shape. The shock towers have been replaced. The engine compartment looks good aside from a hole in each side where the fenders bold to the top. I need to inspect all other metal panels underneath. Should I be ok leaving the engine in?

Thanks
