I am looking to replace all the wiring in my 71 coupe and was wondering if they sold complete wiring kits for the whole car. thanks

Yes...you can buy either complete OEM quality replacement harnesses, or you can buy aftermarket DIY harness such as from Painless Wiring. Both will work depending on your skill level.

For the OEM style...be prepared to shell out some smackers.... in the neighborhood of $600.

+1 on Painless wiring. Simple to install as long as you follow the directions.

+2 on Painless, wired up my 66'....not only are the instructions great, but everytime i did have a question about decoding original wiring, calling painless was the best expierence ever, extremely helpful

With the Painless system don't you have to reuse a lot of the original factory plugs for things like the headlamp switch?

+1 on the painless, but for some of the connectors you must remove the old wires and connect the new painless ones, but thats only for 2 or 3 things, the rest, like headlamp, ac, wiper, ect, it just has a connector on the end that connects straight up too the switch

Atoms is right (atleast on my 65). It didnt come with the neutral safety switch or the column wiring (Turn signals and horns). I think everything else was replaced and just plugged into the components.
*Note: I dont have alot of options on my car so that may make a difference, but I know it had wiring for tach, washer pump, 2 speed wipers,etc. It even had additional wires built in for additional accessories if needed.

Not sure on the count. They came with the painless system. The easy thing about these setups is that the wires and the exact colors of the original and have the information printed on them (i.e. "From fuse panel to wiper motor"). I purchased mine off EBAY and I think it was $500-$600.
