I would guess around 400 - 450, but its the increase in torque that you'll notice most.
IMO once you go over 300 - 350ish you need to be spending more money on the machine shop and the extras to ensure longevity. Hows your budget?

I suggest you talk with someone who can help you design your rotating assembly. I am using ADPerformance. They are not great on communication after the order, but they were great help in designing the rotating assembly I wanted.
There is alot to consider when you start building an engine. The most important thing to consider when you are shopping for cranks, rods, and pistons is what compression ratio do you want. If you can tell someone that, they can help with the stroke, rod length, piston compression height, dish/dome, etc. The stroker kits I have seen for the Windsor are good, but you have very few options in CR unless you build your own.
