Can anyone give me advice on the correct path to route a speedometer cable in a 1969 coupe?

I don't think it matters if it is 4speed or an automatic, but on my 1970 it comes out here from the firewall.I think that is what you wanted to know.

well crap, looks like I don't have that hole afterall...

mine is identical where the wire harness and throttle cable come out, but there's no other holes in that area [&:]

It should be a factory hole, check to make sure there is not a rubber plug in it that has over time taken on the appearance of the rest of the firewall maybe? It is kind of hidden, go to that spot and kinda push in with your finger gentley to see if there is any "give". unless of course you can clearly see there is no hole.
I would then recommend drilling a new hole in that location after you check both sides of the firewall for obstructions the hole will need to be big so the speedometer connectors will fit through. Don't forget to put a rubber grommet around the new hole and you may want to "deburr" the hole so the edges are not sharp.
I'll go out in the garage and get some more pictures for you.

Hope this helps, I searched the net as best I could and every Mustang I found had the speedo cable coming out right there.
