I voted paint it. I have a modified 302 in my 69 when I bought it. I've been working on getting it roadworthy and safe again. I will have my car painted before I do anymore modifications to the engine.
It will be more noticeable to you and other with the paint. Looking at the picture you posted I'd paint it first then get the stroker.
Having said that if you're more into the HP and running the car just have it primered and do the stroker.

I voted to paint it not just for the looks, but also because I wouldn't want rust to form on the body and most primers are porous. With paint it will be better sealed from rust. 300HP in a '65 should be plenty for now
Paint doesn't not make it more fun to drive. I do not get enjoyment from seeing a car painted in the driveway. I can't see paint when I drive. I have to worry about whether it will get dinged or not. HP makes you smile. -Dustin
