My recommendation is to run VR1 b/c of the ZDDP with what ever weight you need for your weather. If it is peaking in the 60s, a 30-40 weight is probably fine. If it is peaking in the 90s, you may want a oil that is not going to thin out as much (SAE 40 to 50). Modern cars with tight clearances use light weight oil (5w20), but these old V8s are more loose. A multiweight oil for a street Janer is a good choice, I just abuse mine a bunch so a solid weight oil makes me feel more safe.
Valvoline makes VR1 in:
10W30
20W50
SAE30
SAE40
SAE50
SAE60

I believe Valvoline has a small bottle of ZDDP to add into your oil manually.
