I completely agree. I put OE-style KH discs on my '67 (same kit for 65-66) and I'm very happy with them. I don't even feel that a power booster is required with the setup.
There are bigger, better setups, but they require having 17" rims and a deeper wallet.

money??? there are some very very good companies out there. from inexpensive at $600 to $2000. The question I asked from day one was...if I have to pick up a set of replacement pads, what do I order? I heard everything from GM, to brand specific. SSBC is one of the few companies where you can go to your local parts store and request a set of pads for a 66 mustang, and they will fit. If you want performance pads or shoes, contact porterfield, I've gottem on my drums and love em.

Conversely, a lotta people consider disc brake conversion because their late-model Nissan has them, and the manual drums are so gosh darn hard. Not that they are racing the Mustang, they just go for nice drives, or cruise night. What they really need is power boost on the brakes they have. Which incidentally costs less, and is easier to install. Not a good way to sell magazines, though.
