I agree with the others when it comes to doing what you want, and making it yours... I would also say that chicks are impressed by the looks and guys by the motor. Personally, I would go with an I6 that looks great versus a V8 that does not.
If you know you are going to do something in the future (example - disc brakes), then I would spend the extra for the upgrade instead of fixing the existing.
Engine upgrade would probably require you to upgrade the fuel pump, carb, trans, rear end, rims/tires, brakes. Might end up costing a lot more than your current restore itself. So if you wanted an 8, you might want to think about starting with an 8 or get a second (V8) donor car. Just something to think about.
I have a 1966 I6 200. Numbers match. Clean metal - Texas car. Good lookin' too. Get plenty of people saying "cool car" and such. But I dream of a fun to drive daily driver with more power. I ride onto a freeway and have trouble getting up to 70 MPH to match speed with the other cars. The soccer moms beat me off the light. Quarter mile time is 19.63.
So, talked to the local Mustang club (http://www.saac-mcr.com/main/). A guy there has done the conversion before. He has spare parts to eh, spare. He said he can install a 302, 6-speed transmission, larger rearend, spindles, front power disc brakes for $3,000. I'll need to get 5-spoke wheels and exhast.

I guess I agree with both sides, If you have a super clean, low miles I6 then I would keep it all original. That does not seem to be so in your case so I say do what you want. I took a 67 I6 coupe and built it the way I wanted to, 347 stroker, 5 speed, 9 inch and a pony interior. I would say the car is worth more than any stock I6 will ever be. Is it worth as much and a factory A code GT fully restored, No. It doesn't matter because I built it for me. When they were building the Elenors at Unique they didn't care if it was an I6 chasis to start with so if you are building what you want an I6 car is a good place to start. It makes more sense to me that you modify a car that is not worth as much to start with. Why modify an A code, K code or factory GT car? It will bring the value down. Modify an I6 the right way and you can bring the value up.
I would say to keep the I6. I have been to a lot of car shows and the I6 drew alot of attention. V8's are very common at the car shows. It would give you good mileage in cruising and easy to work on. Add headers and it will keep up with the soccer mom's SUV on the freeway. If you like power, go for the V8. Stock or personalized is your choice.
