Pulled my intake manifold and valve covers, what's this gunk?

I apologize I should have given more of a back story. It's been sitting for a little over a year. Drained the oil and it was total sludge (no white stuff, but it didn't even resemble oil anymore) and decided to throw on some new valve covers and an intake manifold gasket while doing some other preventative maintenance. First time I've ever pulled the intake/valve covers and didn't recognize the mystery substance.

I am HOPING it's just condensation, and not something more serious. Are there any tests I can perform to diagnose if it's something like a warped head?
