here are a couple of more pics on the coupe. Looks like that is the one I am going to be working on first. It also looks like this is turning into my wifes car. Thinking of going silver with black accents on this one.

That looks like a cool project. I would probably rebuild the 351.

The coupe is a nice bonus.

What is going to be the fastest way to get the rust off of the top of this thing or is it just good old fashion elbow grease?

It'll be a large part elbow grease. There's plenty of products that can help get the rust off easier. I used an angle grinder with abrasive pads (basically heavy duty sand paper in the shape of a disc) to get my paint and rust off. Also a wire wheel that attaches to a screw gun is a good tool.
Those two tools and patience should help. I'd say maybe an hour or two to do the entire roof rust free. That's by my method though...
